Summer cupcakes

When memories come back with just a smell, a taste or a picture... life becomes sweeter and yesterday doesn't seem so far away...



I really enjoyed reading the last post of this french blog : Fais moi croquer where you'll find a recipe for those rhubarb cupcakes. The writer made them remembering the days where her father used to enjoy eating rhubarb when she was to young to enjoy the bitter taste of it...


Recipe :
- 250 grammes of rhubarb sprayed with sugar for a night to get ride of the bitterness
(cut it in little pieces)
- 50 grammes of sugar
- 40 grammes of flour
- 40 grammes of cornflour
- 2 eggs
- 1 tea spoon of baking powder
- 1 vanilla pod

Icing : make it or buy a mix + purple food coloring

Directions :
- pre-hit the oven on 200 degrees Celsius
- whisk sugar and eggs until white
- add flour, cornflour and baking powder
- mix and add the rhubarb, add vanilla seeds
- bake it for 30 min
- decorate with icing
